With over 20 years of experience in Michelin-starred kitchens, Chef Arnaud brings refined techniques and a passion for plant-based gastronomy. He co-founded Herbivore by Locavore, which is dedicated to local flora and sustainable cuisine.
🌿 Kasida, a.k.a. ‘Boss’ – Head Forager, The Locavore Group
Known for his deep knowledge of wild-foraged herbs, Boss guides guests through tasting wild plants, sharing their uses and health benefits.
(Rumor has it, he makes the prettiest omelette on the island!)
🫖 Alfier Djamokkoe – Jamu Specialist & Founder of Djamoekoe
Born into a traditional family in West Java, Alfier is an expert in Indonesia’s ancient herbal traditions. His brand, Djamoekoe, pays homage to the time-honoured art of herbal healing.
